What’s up Asheville?! I hope you are doing well, and I hope you are hungry! Because today, and for the first time I’m going to share with you one of  my  MUST HAVE MEALS in Hip Town

That’s right y’all, we  have awesome Chefs in Asheville, and that makes some of the food you can find in this city OUTSTANDING.

Before I take you there, let’s talk about the people behind the food, yes the people that make the foods we fall in love, and often times go unnoticed. It is my intention to change that, with this said, I like to introduce you to Chef Hector Revilla, one of the Latino Chefs making some serious waves in our city at the moment.

Hector  is the new kitchen Capo at El Gallo AVL, and let me tell you, this guy is UNBELIEVABLE,  the food coming out of his kitchen is a delicious trip to Latin America. This makes perfect sense because the menu is influenced with the flavors of México, Central America, South America and Spain in a masterful way. I loved his food so much, I went to El Gallo twice in one week!

What did I have at El gallo?

Remember this because you are going to thank me later.

You MUST HAVE A QUESABIRRIA TACO at El Gallo AVL, because is BOMBASTIC, and there is no way you have had a taco like this before in Asheville! The spices in the meat, the Oaxaca cheese and the consomé to dip it in, is an experience you are going to remember for a long time.

I can tell you that as a Mexican I am impressed with the flavors he has going in the quesabirria taco, MAESTRO!. You see, Birria is a staple dish in Guadalajara, Mexico, where I went to college.  I love BIRRIA, I have eaten plenty of Birria in my life and this Chef is doing an AMAZING job, no joke! 

Quesabirria Taco you are ⭐️⭐️⭐️⭐️⭐️ for sure!

ARROZ PICADILLO 👏👏👏👏

Mmmmm, beautiful and delicious, I used to think that my favorite rice dish is Paella, but now I’m not sure. The Arroz Picadillo from El Gallo has a lot going on. Full of flavor and yet,  very light, what I really loved was the punch added by the capers, and the fried eggs, the sofrito, the olives all very common in Latin Caribbean cuisine. This dish is a very satisfying meal, and I will be back to eat this rice again for sure!

CHICKEN PEPIAN (GUATEMALAN STYLE)

No tengas pena is a phrase that I heard a lot, while I was in Guatemala. It literally means don’t be shy. 

Well, I wasn’t shy when I was eating this dish. Pepian is traditionally made with chilis, tomatoes, garlic. Not hot at all, flavorful yes, and the pepitas on top (toasted pumpkin seeds) gave it a nice crunch and all these ingredients went very well with the chicken and greens. Thank you Chef for the nice culinary trip to a place that has a special place in my heart.❤️❤️❤️❤️

ENSALADA DE OTOÑO 

I’m trying to eat more greens folks, because I usually drink my greens in smoothies, yes it’s true, I suck at making salads. Well, when Hector suggested I try this salad, I said yes right away because everything I had eaten up to this point was impressive. When my salad arrived, I could smell the chimichurri and this of course was a good sign as this is my  favorite South American sauce, and it went great with the  kale, radicchio, squash, mahon and shrimp.

A great salad full of flavor and the right amount of protein. I definitely eat it again, and again.

I also had  TRES LECHES CACKE, CHURROS, AND COFFEE.

And the CHURRO IS GLUTEN FREE!

Ok, I didn’t eat all this food, I took some home and ate it for the next two days.

Let’s roll back a little. Chef Hector Revilla was born in NYC, to latino parents from Venezuela and Colombia. He hasn’t live in Asheville for very long, but let me tell you, he is going places fast. When I met him for the first time, he was working on the menu for SOBREMESA, a culinary event for Chow Chow highlighting the role of immigrants and Latinos in the local culinary scene 😳
