What up my peeps!? First of all thank you for reading this blog and for supporting the diversifying of our local culinary scene, and of local media. Yes, I believe it is time to highlight EVERYONE in our city, including those that often times go unnoticed, immigrants.

Today I want to tell you about my meeting with Chef Hassan Aberchah, the new Executive Chef at Early Girl Eatery. The Chef and I met on a Friday at the West Asheville location. We had previously agreed to meet at 2:00PM, and the place was bumping when I arrived, and the Chef was slammed. Lindsey, the hostess, was very nice to set me up with some coffee and a biscuit while I waited, and waited.

I was surprised to see that at 2:00PM the place was still so busy. Anyway, when the Chef came out, it was almost an hour late. I thought, rock star move. Well, he was very apologetic and told me that it had been a very busy morning and he couldn’t believe it was already almost 3:00! I was fine waiting because this had to be an indication the food was going to be good. Now, I have been to Early Girl Eatery a few years ago, back when it had different ownership, and this was my first time since the new owner had taken over.

Well, this is very different from what I can remember, I mean the food wasn’t bad back then, but honestly I didn’t understand why it was so popular? However, now I can tell you the PLACE IS GREAT, I had TWO AMAZING menu items, and I LOVED THEM.

In fact, that is why I’m making this review BILINGUAL YO! And then I’m going to blast it as a NEWSLETTER, yes sir, I WANT EVERYONE TO KNOW how freaking AWESOME this place is, in fact I will be back and eat every single item in their menu.

This Chef is in my personal opinion a ⭐⭐⭐⭐⭐Chef, I mean come on, who has the guts to be from Morocco, and to take the challenge to work at a SOUTHERN BREAKFAST STYLE RESTAURANT? Someone that is very confident in his skills as a Chef for sure. At the same time, let’s be honest, immigrants are in many cities the backbone of the restaurant industry in this country.

The MOST AMAZING pimento cheese and jalapeño fried chicken sandwich I ever had This thing made me LOVE the pimento cheese (something I never liked before) and a very light and fantastic French Country Apple Tart with honey mascarpone cream. Mmmm, good times, good times.

Thank you Chef Hassan, and thank you Early Girl Eatery for keeping our local culinary scene vibrant, eclectic and multicultural.

Este evento contará con cada Chef preparando 2-3 pequeños platos de tapas para su disfrute, así como una variedad de muestras de bebidas.

Diáspora habla de la dispersión de poblaciones de sus tierras indígenas, generalmente por migración forzada. Y como atestiguan tanto la historia como la cocina moderna: a donde va la gente, la comida va con ella. Los alimentos escondidos y conservados ofrecían subsistencia y resistencia a los pueblos dispersos, y también una semilla de esperanza para la cultura y la abundancia continuas en un nuevo hogar.

De esta manera, las reuniones culinarias y los mashups de todo el mundo han dado como resultado el sabor y la riqueza de la comida moderna.

UNA MIRADA DIFERENTE

Únase a Chow Chow y al moderador Meherwan Irani – Chai Pani Restaurant Group, para un evento que explora el origen y la fusión de la cocina, una consulta comestible sobre lo que se pierde y lo que se gana cuando la comida y las personas migran. Con una comida y una conversación que viaja, desde el plato tradicional hasta el “plato -ish”, cocina que podría describirse como “indio-ish”, “mexicano-ish” o “vietnamita-ish”, por ejemplo – consideraremos los desafíos y oportunidades que presenta la sustitución de ingredientes, las cuestiones de apropiación y la introducción de cocinas a paladares desconocidos. En última instancia, a través del sabor y la comunidad, descubriremos cómo la odisea moderna del paladar impulsada por estos platos ish también puede informar un viaje de regreso al reconocimiento de las raíces tradicionales.

😳Holy guacamole 🥑 friends! ☝🏽You are looking at one of my favorite foods of all time, and I JUST FOUND IT right here in Asheville❤️❤️❤️and at a FOOD TRUCK 🚚 !!

Where? Hipster town, aka West Asheville’s Haywood Rd😳

So, what is this?

CEMITA = a huge sandwich that is made with A delicious bread also known as CEMITA 🤷🏽‍♂️.☝🏽Now, some of you may not know, but México 🇲🇽 was once ruled by the French 🇫🇷 Yes the French!

Anyhow, because of this, there is some cities in México with great bread 🥖 🥐 Puebla City, the home of the Cemita is one of these cities.

INGREDIENTS

Cemitas are made with tons of avocado, 🥑 quesillo (a mozzarella type cheese) papalo, a plant that is similar in flavor to basil 🌿 and of course meat!😍

This one right here is made of Milanesa, a breaded steak that has its roots in Milan Italy 🇮🇹

Where can you find this baby? Haywood Rd. Between Sunny Point and Ingles.👊🏽 The truck’s name is Tacos Puebla!

Cemita's history

The name, according to Benítez, is related to the unleavened bread of Jewish origin (Semitic) cultivated in Spain by the Sephardic population (Jewish-Spanish) since the Roman Empire. Puebla taxed Madrid with tons of bread six times a year, to supply its high seas crews in the Atlantic and Pacific oceans.

The cemita with that name arose in the mid-19th century, coinciding with the consolidation of the talavera pottery workshops, the textile industry and the artisanal production of glass in the Puebla Valley. It appears as food for workers and artisans, the typical itacate of the popular class, a snack that was shared. Easy to store and transport, as it is eaten cold, it is profitable and cheap.

The adornment of the bread with sesame drawings dates from that same period (1913), on whose cover the artisans achieved great skill in drawing: flowers, stars, animals, phrases, names and landscapes. It is famous in Puebla a meal that General Maximino Ávila Camacho gave in Teziutlán, in which the cemitas consumed had the coat of arms of that municipality drawn.

Today, they can be found made with a wide variety of deli meats throughout the city and state, from markets to local.
